Afyonkarahisar’da Tüketilen Önemli Yabancı Elma Çeşitlerinin Bazı Kalite ve Antioksidan Özellikleri

Abstract

Bu çalışmada Afyonkarahisar (Türkiye) tüketime sunulan ekonomik olarak önemli 5 farklı yabancı çeşit elma (Golden Delicious, Cameo, Fuji, Red Delicious, Breaburn) bazı kalite (su aktivitesi, briks, pH ve renk) özellikleri ve antioksidan kapasitesi (Radikal süpürücü – DPHH) açısından değerlendirilmiştir. Elma örneklerine ait bazı kalite özellikleri ve toplam antioksidan kapasitesi değerlerinin değişimi sırası ile su aktivitesi 0.946 (Red Delicious/ Breaburn ) – 0.955 (Cameo); briks % 12.36 (Cameo) – 14.50 (Fuji), pH 4.22 (Golden Delicious) – 4.92 (Cameo), ve % DPPH (radikal süpürme aktivitesi yöntemi) %4,46 ile (Fuji ) – %17,24 (Red delicious) olarak tesbit edilmiştir. Ayrıca elma örneklerinin kabuklarına ait renk analizi ile L, a ve b değerleri değişimi sırasıyla 3 3.64 (Cameo) – 72.97 (Golden Delicious), (–3.14) (Golden Delicious) ile 32.24 (Breaburn) ve 0.25 (Red Delicious) – 44.79 (Golden Delicious) olarak bulunmuştur. Elma örneklerinin etindeki renk değerleri L, a ve b sırasıyla 79.11 (Red Delicious) – 82.06 (Golden Delicious), (–0.40) (Breaburn) ile (–1.28) (Cameo) ve 22.78 (Fuji) – 26.08 (Golden Delicious) olmuştur.

In this study, economically important five different foreigner apple cultivars ((Golden Delicious, Cameo, Fuji, Red Delicious, Breaburn) consumed in Afyonkarahisar-Turkey were evaluated for their quality and antioksidant properties. The water activity, brix values %, pH data, and total antioksidant (radical scavenging -DPHH) capacity of the apple samples were changed 0.946 (Red Delicious/ Breaburn ) – 0.955 (Cameo), % 12.36 (Cameo) – 14.50 (Fuji), pH 4.22 (Golden Delicious) – 4.92 (Cameo), and 4,46 ile (Fuji ) – %17,24 (Red delicious), respectively. Also, the changes of color data (L, a and b) in peel of apple samples were determined 3 3.64 (Cameo) – 72.97 (Golden Delicious), (–3.14) (Golden Delicious) - 32.24 (Breaburn) and 0.25 (Red Delicious) – 44.79 (Golden Delicious), respectively. The color data (L, a and b) in flesh of apple samples were changed 79.11 (Red Delicious) – 82.06 (Golden Delicious), (–0.40) (Breaburn) – (–1.28) (Cameo) and 22.78 (Fuji) – 26.08 (Golden Delicious), respectively.
