Mutfak Kültürünün Gaziantep'in Geleneksel Konutlarında İncelenmesi

Abstract

Bu makalede kültürün en önemli göstergelerinden olan mutfak kültürünün geleneksel konutlara yansıması Gaziantep mutfak kültürü ve geleneksel konutları üzerinden incelenmiştir. Araştırma konusu olarak Gaziantep kentinin seçilmesinin nedeni mutfak kültürünün zenginliğidir. Gaziantep'in dünyanın yaşanılan en eski kentlerinden biri oluşu tarih boyunca çeşitli medeniyetlere ev sahipliği yapması sonucu zengin bir mutfak kültürüne sahip olmasını sağlamıştır.2016 yılında Gastronomi dalında UNESCO’nun “Yaratıcı Şehirler Ağı”na giren Gaziantep, bu ödüle sadece zengin yemek kültürü ile değil, yemek kültüründeki yaratıcılığı ile de layık görülmüştür. Yaratıcılığı ise farklı türden gıda maddelerinin bir arada kullanımına yönelik yemek üretiminden kaynaklanmaktadır. Gaziantep kentinin medeniyetinin başlangıcından itibaren günümüze kadar ulaşan mutfak kültürü, sadece yemek çeşitliliğinde değil mutfak ile ilgili diğer bileşenlerin de dâhil olması ile birlikte korunması gereken bir mirastır. Bu mirasın korunması, ancak, insan yaşamının sürdürüldüğü mekânlar üzerinden sağlanabilir. Bu amaçla araştırma kapsamında ele alınan Gaziantep mutfak kültürünün geleneksel konutlardaki mekânsal ve sosyal yansımaları incelenmiştir. Araştırmanın sonucunda kültürel mirasımız olan mutfak kültürünün geleneksel konutlarını şekillendiren anlayış ortaya konulmuş ve bu anlayışın gelecekte üretilecek konutların biçimlenmesine ışık tutması hedeflenmiştir.

In this research, cultural artifacts which are one of the most important representations of culinary culture have been studied on traditional culinary culture and traditional houses of Gaziantep.  The main topic of research is the richness of the culinary culture of Gaziantep. The fact that Gaziantep is one of the oldest cities in the world has made it a rich culinary artifact after it has been home to various civilizations throughout history. Entering UNESCO's "Creative Cities Network" in Gastronomy in 2016, Gaziantep is not only worthy of its rich food culture, but also its creativity in its food culture. Creativity is the result of food production for the co-use of different kinds of foodstuffs. At the same time, the acquisition of the raw materials used for food production from this geographical area also points to the existence of a sustainable culture. The culinary culture that has reached daily from the beginning of the civilization of the city of Gaziantep is a heritage that must be preserved along with the inclusion of other kitchen related components.The protection of this heritage can only be achieved through the spaces where human life is maintained. For this purpose, the spatial and social repercussions of Gaziantep culinary cultures in traditional houses were examined. As a result of this research, the concept of shaping the traditional houses of our cultural heritage, culinary culture, has been put forward and this understanding has been aimed to shed light on the formation of houses to be produced in the future
