Presence of Aflatoxin M1 in Cream (Triangle) Cheese of Different Brands Offered for Consumption

Abstract

Fungal species can produce mycotoxins during improper food production, transportation and storage. Severe health effects of mycotoxins have been reported, including immunosuppression, growth impairment in children, weight loss, and acute toxicosis. Aflatoxins, among mycotoxins, are highly toxic metabolites produced by various Aspergillus species. Aflatoxin B1, found in animal feed, is converted into aflatoxin M1 in the liver of cattle consuming feed and is secreted in milk. Cream cheese is a fresh dairy product of increasing economic importance in the food industry. To meet the increasing consumer demand, it is generally preferred to use poor-quality milk or to produce it by mixing non-dairy ingredients. For this reason, in this study, 46 cream (triangle) cheese samples offered for sale in Afonkarahisar and its centre were collected. The collected samples were analyzed for the presence of AFM1 using the AFM1-ELISA kit. In the study, AFM1 was detected in six samples (0,025 – 0,039 µg/Kg) of cream cheese samples. All samples were determined to be under the limits of the Turkish Food Codex (0,050 µg/Kg) regarding AFM1 level. As a result, the fact that AFM1 was detected in cream cheeses indicates that the samples may be risky in terms of public health, and it should be recommended that necessary controls be carried out. Studies should be carried out to inform consumers.

Gıdalarda uygun olmayan üretim, nakliye ve depolama sırasında mantar türleri mikotoksin üretebilirler. Mikotoksinlerin bağışıklık sistemini baskılama, çocuklarda büyüme bozukluğu, kilo kaybı ve akut toksikoz olmak üzere ciddi sağlık etkileri bildirilmiştir. Mikotoksinler içinde bulunan Aflatoksinler çeşitli Aspergillus türleri tarafından üretilen son derece toksik metabolitlerdir. Hayvan yemlerindeki bulunan aflatoksin B1 yemleri tüketen sığırların karaciğerinde aflatoksin M1’e dönüştürülür ve süt ile salgılanır. Krem peynir gıda endüstrisinde ekonomik önemi artan taze bir süt ürünüdür. Artan tüketici talebini karşılamak için genellikle kalitesiz süt kullanımı ya da süt ürünü olmayan bileşenlerin karıştırılarak üretimi tercih edilebilmektedir. Bu nedenle yapılan bu çalışmada Afyonkarahisar ile merkezinde satışa sunulan 46 adet krem (üçgen) peynir örneği toplanmıştır. Toplanan örnekler AFM1 ELISA kiti kullanılarak AFM1 varlığı yönünden analize alınmıştır. Yapılan çalışmada krem peynir örneklerinin altı tanesinde (0,025 – 0,039 µg/Kg) AFM1 tespit edilmiştir. Örneklerin hepsi AFM1 seviyesi yönünden Türk Gıda Kodeksinde verilen limitlerin (0,050 µg/Kg) altında tespit edilmiştir. Sonuç olarak krem peynirlerde AFM1 tespit edilmiş olması halk sağlığı açısından örneklerin riskli olabileceği, gerekli kontrollerin yapılması ve tüketicilerin bilgilendirilmesine yönelik çalışmaların yapılması önerilmelidir.
